Nutty Tropics Delight

This scrumptious blend of rolled oats, toasted coconut chips, and a bounty of nuts like cashews and pistachios, all sweetened with maple syrup and brown sugar, will make every bite a mini paradise. Ingredients
3 cups rolled oats
1 ½ tbs coconut chips
2 tsp pumpkin seeds
⅓ cup cashews
⅓ cup pistachios
¼ cup maple syrup
¼ cup brown sugar
¼ cup sunflower oil
1 ½ tsp salt
1 ½ tsp vanilla extract

Prep

Preheat the oven to 150ºC (300ºF). Line a rimmed baking sheet with parchment paper or a silicon baking mat.

Chop any large ingredients into smaller pieces.
Dry Mixture

In a large bowl, mix together the rolled oats, coconut chips, pumpkin seeds, cashews and pistachios.
Wet Mixture

In a saucepan set over low heat, warm the maple syrup, brown sugar, sunflower oil, salt and vanilla extract. Keep stirring until fully mixed, then remove from the heat.
Bake

Fold the wet mixture into the dry mixture, making sure the dry ingredients are thoroughly coated.

Spread the granola mixture over the prepared baking sheet.

Bake until dry and lightly golden-brown, 35 to 45 minutes, stirring the granola halfway through.

Remove the granola from the oven.

Allow to cool to room temperature before transferring to an airtight storage container.
