
Nutty Pumpkin Spice Crunch

Ingredients
3 cups rolled oats
1 ½ tsp pumpkin seeds
⅓ cup pecans
⅓ cup hazelnuts
⅓ cup pistachios
½ cup maple syrup
¼ cup canola oil
1 tbs ginger powder
¼ cup raisins
¼ cup dried cherries

Prep

Preheat the oven to 150ºC (300ºF). Line a rimmed baking sheet with parchment paper or a silicon baking mat.

Chop any large ingredients into smaller pieces.
Dry Mixture

In a large bowl, mix together the rolled oats, pumpkin seeds, pecans, hazelnuts and pistachios.
Wet Mixture

In a saucepan set over low heat, warm the maple syrup, canola oil and ginger powder. Keep stirring until fully mixed, then remove from the heat.
Bake

Fold the wet mixture into the dry mixture, making sure the dry ingredients are thoroughly coated.

Spread the granola mixture over the prepared baking sheet.

Bake until dry and lightly golden-brown, 35 to 45 minutes, stirring the granola halfway through.

Remove the granola from the oven. Mix in the raisins and dried cherries.

Allow to cool to room temperature before transferring to an airtight storage container.
